If you were to walk into a restaurant or a bar here in the U.S. looking for a white wine, chances are if they would offer either a Pinot Grigio or a Sauvignon Blanc (if not both). Sauvignon Blanc is one of the most popular white wine varietals here in the States—a particular favorite during the warmer Spring and Summer months, thanks to its refreshing quality. This cool, dry crispness is due to the high levels of acidity and low sugar content found in the wine. Originating in the Bordeaux region of France, most experts agree that the name “Sauvignon Blanc” comes from the French words, “sauvage”—meaning “wild” and “blanc,” meaning white; wild white—an appropriate name, given how the green-skinned grape grew wild, like a weed throughout the entire region. Back in the day, it is believed that winemakers used these grapes in their white blends as well as in a dessert wine called Sauterne.
While Sauvignon Blanc may have originated in Bordeaux, it wasn’t until it traveled north to the Loire Valley region of France that winemakers started cultivating the grapes for their own, non-blended wine. The French named this wine Sancerre, after the region of France where it was created. Super easy to drink, and perfect, both with food or without, Sancerre became massively popular in Paris during the twentieth century, where it was served in bistros and bars all over the city. While regularly enjoyed, “Sauvignon Blanc” wasn’t a widely recognized name for the varietal until the 1980s, when New Zealand stepped in and started marketing the crisp, slightly tart white as it is known today.
